Brunch Cocktails

The Ultimate Bacon Bloody Mary

This year elaborate savoury cocktails are making their way onto the menus of some of the most highly regarded bars in the UK. The Bloody Mary is the undisputed Queen of savoury cocktails, but how can you take this classic cocktail up a notch create something truly special? This cocktail is the perfect drink to serve at any summer event, or at brunch if you need a hangover cure the morning after.

Mixologist’s Secrets

The debate about what makes the perfect Bloody Mary is based on personal preference, and recipes vary drastically, even among top mixologists. Try a few combinations and figure out your favourite blend.

Spice it up

You can go as hot as you can handle with your Bloody Mary recipe, and it’s up to you the type of spice you prefer. Typically Tabasco provides the heat, but you can mix it up and add horseradish for a bit of a kick, or Sriracha for both spice and a hint of garlic.

Tomato or not tomato...

Traditionally tomato is the only juice appropriate for this cocktail so it’s best to stick to this or, arguably, you're no longer making a Bloody Mary. Using a higher quality tomato juice or passata will help to stop your cocktail becoming quickly watered down with ice, and give you a richer base to work with.

Traditional or twist?

Traditionally, a Bloody Mary is made with vodka, but there are plenty of recipes that offer a slight twist on this classic recipe. By adding tequila you get a Bloody Maria, or gin gives you a Red Snapper. An added shot of sherry or port can also add an extra depth of flavour to your cocktail and help to marry some of the flavours together. We’ve stuck with the classic vodka, but added our own bacon infusion for a delicious savoury flavour that will impress at your next brunch get together.

Bacon Infused Vodka

Ingredients Equipment from
4 Slices Bacon 3 Screw Top Jars
750ml Vodka Strainer
Coffee Filter
Frying Pan

  1. Split the vodka evenly between the three jars.
  2. Cook the bacon in a frying pan over a medium heat until crisp.
  3. Discard the bacon and take two tablespoons of the remaining fat and set aside.
  4. Evenly distribute the two tablespoons of fat between the three jars of vodka. Put on the lids and shake thoroughly.
  5. Leave the jars at room temperature for around 6 hours to infuse.
  6. Place the jars into the freezer for around 30 minutes. This will allow the bacon fat to freeze, without freezing the vodka.
  7. Place the coffee filter into the strainer, and strain the vodka, removing the fat and collecting the vodka in a bowl beneath.
  8. Using the funnel, either put your vodka back into the mason jars or into the original 750ml bottle. Your bacon infused vodka is now ready to use. Store in a cool, dry place for up to six months.

The Ultimate Bacon Bloody Mary

Ingredients Equipment from
200ml Bacon Infused Vodka 2 Large Jugs
1.4 Litre Tomato Juice Long Stirring Spoon
4 Teaspoons TabascoHandled Jam Jar Glasses
4 Teaspoons Worcester Sauce
1 Lemon, Cut Into Wedges
1.5 Teaspoon Celery Salt
Pinch Black Pepper
4 Bacon Rashers
4 Celery Sticks

  1. Firstly prepare your bacon rasher garnish by grilling until crisp, then set aside on some kitchen roll to allow some of the fat to be absorbed.
  2. To a jug, add the tomato juice, bacon infused vodka, Tabasco, Worcester sauce, celery salt and pepper. Squeeze in the lemon wedges, but keep a little juice in them for use as garnish later. Add ice cubes to your jug and gently stir with a spoon.
  3. Pour the mixture into the other jug, then back and forth a couple of times. This is known as ‘rolling’ and allows you to mix the cocktail without causing froth that happens when shaking tomato juice.
  4. Once mixed thoroughly, pour your cocktail through a strainer into your glasses, leaving the ice behind to avoid a watery mix once melted.
  5. Cut your celery to an appropriate size for your glasses and pour in your Bloody Mary, adding the celery and lemon as garnish. If you wish, also add a mix of celery salt and pepper to the rim of your glass.
  6. Finally, add your crispy bacon to the cocktail and your Ultimate Bacon Bloody Mary is ready to drink. Enjoy.
