This cocktail is a nod to some of the best flavours that
nature has to offer. The zesty lemon is softened by the sweetness of the honey. And the hint of rosemary is the perfect accompaniment to those spring evenings spent in the garden.
Both the rosemary cordial and the cocktail itself are simple
to make, and when stored in a cool, dark place the cordial will last up to two
months.

Method
- Put all ingredients into a saucepan and bring to a simmer.
- Stir on the heat until all the sugar has dissolved.
- Leave the syrup to cool slightly, then put the funnel into the bottle and pour your syrup through a strainer into the funnel to remove any bits.
- Seal the lid and store in a cool dry place until needed.
Rosemary, Lemon & Honey Vodka

25ml Rosemary Syrup | 25ml Vodka |

Method
- Add ice to the rocks glass and fill with cold water to cool the glass while you make your cocktail.
- Fill your shaker with ice. Cut your lemon in half and squeeze half into the shaker.
- Add the honey, rosemary syrup and vodka to the shaker and then for 30 seconds (or until the ingredients are properly mixed) shake vigorously.
- Pour the ice and water out of your rocks glass, then add a few cubes of new ice to the glass.
- Using the strainer, pour the mixture you've made into the glass, then fill to the top with soda.
- Cut a slice of lemon and take a small sprig of rosemary and add these to your cocktail as garnish.
